Phillip Jones was inspired by the great growths of La Belle France, to abondon his career as research scientist and plant Bordeaux varietal clones amongst the pasturelands of Gippsland. All good men of science are persuaded by the facts, a few fruitless vintages convinced Jones to apply his efforts to the noble grapes of Burgundy, Chardonnay, Pinot Noir and Gamay. Jones makes wine like a shaman, his standards of viticulture are at one with local flora and fauna, for the realization of vintages which are crafted through an analytic focus on the sanctity of the wine's texture.

Phillip Jones has been producing icon Australian Pinot Noir from the cool climes of Leongatha at Gippsland for over two decades. A biodynamic, fully organic viticulture is matched by old fashioned, highly artisanal standards of vinification. Much attention is paid to the handling of ferments and movement of the juices, retaining the refinement and textural integrity of the wine.

The Balnave vineyards are endowed with some spectacular clones, a hectare each of Entav 338 and 412 Cabernet, Entav 181 Merlot, D3V14 Merlot and a preponderance of the splendid Reynella Cabernet Sauvignon. A further planting of the cavalier Petit Verdot contributes an essential component to the final assemblage. Fruit is treated to cold soaks and inoculation in a large open top fermenter, followed by a spell in new Francois Freres Allier oak barrels. Beautifully perfumed of blueberries, violets and florid cherry ripe, an exhilarating red wine style to accompany cold duck or quail, prosciutto or jamon.

Fully inspired by the guidance of Coonawarra patriarch Bill Redman, Doug Balnaves planted two and a half hectares of Shiraz to the rich red terra rosa soils along Riddoch Highway in the 1970s. Crafted from these veteran parcels of low yielding, old vine Shiraz, a harvest of hand sorted berries, with a measure of whole bunches, are filled into open top vessels for a week of ferments, followed by a year in good French oak. Perfumed of wild brambleberry, cherries and jube, its fleshy plum fruit richness and piquancy of black pepper spice, lingering to the end of a fine grain tannin finish.

The Balnave vineyards are divided into small blocks of between one and two hectares, the character of each can be quite unique. The final assemblage of Merlot and Cabernet Sauvignon is a compilation of selected rows off the estate's Walker, Quarry and Dead Morris blocks, treated to varying regimens of oak barrel ferments and extended macerations. Fragrant of cassis, blueberry fruit and fine cedary oak, the finished Balnave Cabernet Merlot has spent sixteen months maturing in a luxuriously high proportion of tight grain French oak barrels from Seguin Moreau and St Martin cooperages.

Glenrowan has remained quarantined from any exchange of viticulture since the 1890s, a felicitious quirk of history which has preserved the provenance of some great old vineyards. Varley is a compilation of the very best parcels Baileys Shiraz, treated to the time honoured traditions of open ferment, pumpovers and a course of extended age in the pick of fine French oak. Its impenetrable purple black hues, presage a prosperous palate of blood plums, bramble and dark earthen spice.

The Bailey's property at Glenrowan contains fifteen blocks of Shiraz, including some of the oldest vines in Victoria. Full bodied, traditionally styled, generous and august, yet marvelously approachable in its youth, after a term of fourteen months in a selection of French and American oak puncheons, characterised by its affability, seamlessness and style. Ripe plum and cherry fruit characters, enriched by dark licorice, espresso and malt, its robe of finely integrated oak and supportive length of gummy tannins, define a Shiraz of provenance and graceful old world charm.
